I have linked a good quality vanilla extract which is crucial for the overall flavour of the cupcakes. Try to avoid vanilla essence - it's just not the same and doesn't do this recipe justice!


You can adjust this recipe by substituting the butter for vegetable oil. This will allow the cupcakes to remain moist and soft if you are chilling them or baking in advance.

You can also add colouring to the icing, or cocoa powder (if you prefer a chocolate flavour).
